Mother’s Day Breakfast Recipes
Sausage and Potato Breakfast Casserole
In the event that you, like me, gravitate toward breakfast casseroles with eggs, then this recipe’s for you. Not that there’s anything wrong with eggs – I love them! But I found this sausage and potato breakfast casserole a delicious and hearty new option. My husband and I love sharp cheddar cheese to be sure. However, feel free to switch to a favorite cheese of your choice or a favorite blend. Since my husband is diabetic, I’m looking forward to trying chopped cauliflower in place of the potatoes. Let us know in the comments below about any substitutions or additions you make and how you like them.

Sausage and Potato Breakfast Casserole
Equipment
- 1 8-inch by 8-inch glass baking dish
- 1 large skillet
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 knife for chopping green onions
Ingredients
- 1 lb. bulk breakfast sausage
- 2 T. all-purpose flour
- 1 1/2 c. whole milk (do not use low-fat or non-fat milk)
- 1 16-oz. pkg. frozen shredded hash brown potatoes
- 4 green onions, finely chopped
- 1 1/4 c. grated sharp cheddar cheese
- butter for buttering pan
Instructions
- 1. Preheat oven to 350 degrees.
- 2. Butter an 8 x 8 x 2-inch glass baking dish.
- 3. Cook sausage in heavy large skillet over medium to high heat until brown, breaking into small pieces with back of spoon.
- 4. Mix in flour, then milk. Cook until mixture thickens and comes to boil, stirring occasionally for about 5 minutes.
- 5. Arrange potatoes in prepared dish. Top with 1/3 of green onions, 1 cup of cheese, 1/3 of green onions, sausage mixture and remaining 1/4 cup of cheese.
- 6. Bake casserole until potatoes are tender, about 45 minutes.
- 7. Sprinkle with remaining green onions and serve. Serves 6.
