Mexican Beef-Cheese Soup works equally well as a soup or dip. When combined with corn souffle, tonight’s dinner is complete. You don’t have to wait for Cinco de Mayo to enjoy these flavorful favorites from Bronner’s staff cookbooks! Specifically, these two recipes are from “Bronner’s Flavorful Favorites, Book 1.”

  • 1 large saucepan
  • 1 wooden spoon
  • 1 small colander
  • 1 can opener
  • 1 cutting board
  • 1 sharp knife for cubing cheese & chopping onion

Ingredients

  • 1 lb. ground beef
  • 1 medium onion, chopped
  • 1 14.5 oz. can diced tomatoes with green chilies, undrained
  • 1 11 oz. can Mexicorn, drained
  • 1 lb. Mexican or American cheese, cubed (I cubed a block of queso cheese.)

Instructions

  • In a large saucepan, cook beef and onion over medium heat until meat is no longer pink; drain.
  • Stir in the tomatoes, Mexicorn and cheese.
  • Cook and stir until cheese is melted.

Notes

Also makes an excellent dip for tortilla chips. If you wish to thin the recipe, add beef broth, evaporated milk or a combination of the two.

Corn Souffle

Lynn Gonzales
Course Side Dish
Servings 68 people

Equipment

  • 1 large mixing bowl
  • 1 wooden spoon
  • 1 small bowl for beating eggs
  • 1 whisk for beating eggs
  • 1 small colander
  • measuring cups
  • 1 deep casserole dish
  • 1 can opener

Ingredients

  • 2 cans cream-style corn
  • 1 can whole kernel corn, drained
  • 1 box Jiffy corn muffin mix
  • 2 eggs, beaten
  • 1/2 cup oil
  • 3/4 cup milk

Instructions

  • Mix all ingredients.
  • Bake in deep casserole dish uncovered for 1 to 1 1/2 hours at 350 degrees F.

Microwave Instructions

  • Microwave 30-40 minutes at 50% power.

Notes

You can substitute Mexican whole kernel corn for extra color and flavor, which I did. If you do bake this recipe in a deep casserole, you will need to bake it about 2 hours. (Cover with foil when needed to prevent over-browning.) A knife inserted near the center should still be slightly moist near the tip when it is done. The souffle should also be custard-like but not runny at all. It will continue to set up slightly as it cools.
