While technically the only vegetable in this salad is the romaine lettuce – the serving of fruit, nuts and cheese rounds this colorful dish out to a nutritious side or meal in itself! And … arrives perfectly in time to help inspire those who may share one of the top New Year’s resolutions to eat more whole food!
Even if that’s not your resolution, you’re sure to appreciate the appet-eye-zing beauty of this salad layered with robust flavors that beautifully meld in your mouth into perfect harmony!

Toss out the notion that salads are just for summer or will leave you hungry and enjoy another recipe from Bronner’s Flavorful Favorites, 2nd Edition cookbook:
FESTIVE TOSSED SALAD*
Serves 8-10

Dressing Ingredients:
– 1/3 c. sugar
– 1/3 c. red wine vinegar
– 2 tbl. lemon juice
– 2 tbl. onion, finely chopped or minced
– 1/2 tsp. salt
– 2/3 c. vegetable oil
– 3 tsp. poppy seeds
Instructions:
1. Combine ingredients in a jar and shake to blend.
Salad Ingredients:
– 10 c. romaine lettuce, torn
– 1 c. shredded Swiss cheese
– apple (1 medium-sized), diced
– pear (1 medium-sized), diced
– 1 c. dried cranberries
– 1/2-1 c. chopped cashews
Instructions:
1. Combine ingredients in a large bowl.
When ready to serve, drizzle salad with desired amount of dressing and toss to coat.

Nuts and cheeses are good fats that are rich in nutrients and help your body to both feel satiated longer and absorb nutrients from other foods. Feel free to cut down or omit the sugar in the dressing if you like yours a bit more tart, like me. Reduce sugar further by trimming the 1 c. dried cranberries to a 1/2 c. or 1/4 c. portion.
