Cornfetti – Summer Salad Or Salsa?

Cornfetti … is it a summer salad or salsa? The answer is yes. But also, yes! It’s both. And it’s delicious. So the real question then, is, does it matter?! You’ll just have to make this corn salsa — corn salad?! and decide for yourself!

This Bronner’s Flavorful Favorite recipe doesn’t get much more “Bronner” than this!😂 You see, it’s a recipe from Dietrich Bronner, himself. Dietrich is the grandson of Bronner’s CHRISTmas Wonderland’s originator, Wally Bronner. What’s more, he’s a passionate advocate of enjoying whole foods through creative culinary experiences. As a result, he shares opportunity and inspiration through both his catering Venture and also through recipes like this one, found in Bronner’s cookbook collection.

As a matter of fact, Cornfetti is just one recipe of several he has published in Bronner’s Flavorful Favorites. Furthermore, there are also recipes from other members of the Bronner family included. Trust us when we say there’s more than a kernel of truth to that! One such recipe, for example, is Irene Bronner’s Corn Casserole. But let’s “pop” back to this Cornfetti recipe. Because, having had the opportunity to capture some of Chef D’s edible experiences, there’s something you should know…

Cornfetti

First off, the name …

“What’s in a name?”

I’m sorry Mr. Shakespeare. But the name does in fact matter when it comes to many of Dietrich’s recipes.

In this case, it’s confetti and corn … It’s CORNFETTI!🥳

Second, Dietrich has a penchant for culinary creativity … even if it’s a bit on the corny side. (OK, we’re talking about cornfetti, how could we resist that one?!)

But truth be told, with him, we never know what came first. The chicken or the egg?! The plate is Dietrich’s canvas and the flavors are his palette. Whether it be a combination of wholesome, unexpected ingredients, garnished to the Hiltz, or just crazy seemingly irrelevant concepts to meal time — he can take some pretty wild ideas and bring them to fruition.

Take, for instance, one of my personal favorites. Dietrich’s take on family GAME NIGHT. It featured a plethora of edible courses inspired by classic family games like canapé “checkers”, a cheese and balsamic “Tic-Tac-Toe” and even twisted root vegetables ala “Twister” style.

Another example was a dinner themed: “Romp Through The Garden.” With dishes like this “Turnip” which is made from everything but turnips!

Corn Salsa Or Salad?!

So now you know why this Cornfetti is both a corn salsa and salad that is sure to be like a “cornfetti” garnish sprinkled all over your meal!

Gardeners can delight that this recipe base comes together from 6, simple, wholesome ingredients. Likely found in their own garden! And those like me who can only dream of gardening? Well, the produce section is our best friend!

  • Roma Tomatoes
  • Red & Green Pepper
  • Red Onion
  • Green Onion
  • Sweet Corn

But where the magic really happens is in the dressing that this corn salsa/salad marinates in to develop and marry all the flavors into a true party for the palate.

  • Lemon Juice
  • Lime Juice
  • Sugar
  • Red Wine Vinegar
  • Balsamic Vinegar
  • Olive Oil
  • Garlic
  • Cilantro
  • Spices

Ingredients
  

Salad/Salsa Ingredients

  • 1 large can Sweet Corn drained
  • 4-5 Roma Tomatoes* seeds and juice removed. *See notes
  • ½-1 Red Bell Pepper chopped finely
  • ½-1 Green Bell Pepper chopped finely
  • 1 Small Red Onion chopped finely
  • 4-5 Green Onions including tops, chopped

Dressing

  • 1 tbsp Olive Oil
  • 2-3 tbsp Red Wine Vinegar start with 2 tbsp
  • 2-3 tbsp Balsamic Vinegar start with 2 tbsp
  • ½-1 Lemon juiced
  • 1 Lime juiced
  • 2 cloves Garlic crushed, chopped or pressed
  • 1-2 tbsp Sugar to taste
  • ½ tsp Lawry's® Seasoning Salt to taste
  • ¾ tsp Cumin
  • ¾ tsp Pepper combination of black and red
  • ½ tsp Chili Powder
  • ¼ cup Cilantro chopped
  • ½ tsp Cajun Seasoning

Instructions
 

  • Whisk the dressing ingredients together.
  • Combine dressing with all the other ingredients in a large bowl, stir well.
  • Taste for seasonings. When well seasoned, refrigerate for several hours to let the flavors develop, stirring occasionally.

To Serve

  • Serve cold on a bed or leaf of lettuce.
    Alternatively, consider an endive boat, cabbage cup or hollowed out pineapple.

A Note On Tomatoes – choose tomatoes with a lot of skin and little meat.

  • Serve in red or green cabbage cups. Likewise, Endive or Baby Gem Lettuce “boats” are a delightful way to serve this garden fresh recipe!
  • Hollowed out pineapple or coconut gives this bright mix a sweet, tropical twist.

Additionally, you can use it to top traditional salad greens or pasta.

But my taco-loving heart of course couldn’t resist using this recipe as a corn salsa to top chicken tacos with corn shell tortillas lightly fried in olive oil.

    Love it! I’m glad you used Roma tomatoes. Those were my Italian grandmother’s go-to tomatoes! Can’t wait to try all these fabulous recipes! Consider me “subscribed!”
