Breakfast Casserole – Bronner’s Breakfast Club

Bronner’s Breakfast Club’s breakfast casserole checks all the boxes for a great breakfast recipe! First, it can be prepared the night before, refrigerated, and baked the next morning. Second, it’s loaded with hearty proteins: eggs, sausage and cheese. And third, it’s full of fun. Who wouldn’t love a cup of Rice Krispies in their breakfast casserole?

Making the Most of This Breakfast Casserole Recipe

All things considered, you can add a fresh fruit salad or muffin and a cup of juice or coffee, and your breakfast is complete. Or you can try it with a side of Mother’s Crockpot Applesauce or our Avocado Orange Salad. (The beautiful colors and flavors in this salad make it a perfect side for breakfast or lunch.) In the event that you have leftover breakfast casserole, you can warm it up in the microwave. Nevertheless, you should be careful not to overheat it.

Since we love onion, we were generous with it in this recipe, using a medium onion. (No regrets!) Moreover, if you love cheese, you can sprinkle as much as you like on top.

Breakfast Casserole

  • 1 lb sausage browned and drained
  • 1 small onion chopped
  • 1 c Rice Krispies cereal
  • 10 eggs beaten
  • 1 can cream of celery soup
  • 1 c. cheese shredded, plus extra for topping


  • Mix all ingredients together and let set in a 9 x 13-inch pan in the refrigerator overnight.
  • In the morning, sprinkle more cheese on top and bake at 350°F for 40-45 minutes.
