Salad The Right Way

This salad is SO SATIATING!! Nothing is worse than when you’re trying to “eat healthy” only to find yourself scouring the kitchen a half-hour later from (what feels like) starvation … Okay, that might be a bit dramatic. But I’m sure someone else has felt this way, too. (Please tell me I am not the only one?!) I have found that adding good fats like avocados and walnuts to salads staves off the aforementioned side affect from skimpy salads. As a result, I’m full for HOURS! In addition, I know my body is absorbing all the nutrients properly, which makes me feel like I am not eating salad in vain.

Despite the fact that I’ve had avos in many different types of dishes, I’d never had them paired with oranges, like this. And can I just say, WOW!? Creamy avocado and sweet juicy oranges are balanced by the tang of feta cheese and onions on a flavorful palette of fresh, crisp lettuce.

AVOCADO ORANGE SALAD

Avocado Orange Salad With Feta Cheese, Walnuts, Onions, And Citrus Salad Dressing

Serves 2

Salad Ingredients:

– 2 cups torn salad greens
– Naval orange, peeled and sectioned (1)
– Lg. ripe avocado, peeled and sliced (1)
– Small onion, chopped or sliced thin (1)
– 1 Tbl. chopped walnuts, optional
– 1 Tbl. crumbled feta cheese, optional

Citrus Dressing Ingredients:

– 1/8 cup vegetable oil
– 2 Tbl. orange juice
– 1 Tbl. lemon juice
– 1 Tbl. sugar
– ½ tsp. grated orange peel
– 1/8 tsp. salt
– 1/8 tsp. celery seed

Alternate Dressing Ingredients:

– 1 Tbl. fresh-squeezed orange juice
– 1 tsp. lemon juice
– 2 Tbl. white vinegar
– ¼ tsp. mustard powder
– ¼ tsp. black pepper, coarsely ground
– 1 Tbl. minced scallions
– ½ tsp. minced garlic

Instructions:

1. Arrange torn salad greens, orange, avocado and onion slices.
2. In a jar with a tight-fitting lid, combine dressing ingredients; shake well.
3. Drizzle over salad.
4. Top with walnuts and feta cheese if desired.
5. Serve immediately.
